Baked Eggs with Canadian Bacon and Spinach


These are amazing!  I found it awhile back and still love having a reason to make it!  This was also on our Mother's Day table for breakfast!  It is so easy to make, you won't believe it!

Here is what you do.  Preheat the oven to 350 degrees and butter the ramekins.  Melt 3 tablespoons of unsalted butter in a large pan.  Add 2 tablespoons minced yellow onion to it and season with salt and pepper.  Saute for about 1 minute.  Add 6 ounces of baby spinach to the pan and cook until wilted, about 2 minutes.

  

Place one slice of Canadian bacon in each ramekin and top with the spinach mixture.


Crack eggs into ramekins and season with salt and pepper.



Top with one tablespoon of cream over each egg.  (You can add cheese if you'd like as well.)



Bake in the oven for 15-18 minutes until the egg whites are set, but the yolks are still runny.



Serve with skillet potatoes and toast.
